If she is such a Christian, where is her deep seated respect for the sanctity of life (an unrestrained baby in her lap?!?), talking on a cellphone & writing notes while driving?

Even Christ made the discrete POINT of paying the head tax to comply with Roman regulation, setting the example for all footstep followers that one is under obligation to obey the law. Acts 5:29 carries the only known (to me) caveat to this notion of being a law-abiding citizen: “We must obey God as ruler rather than men.” So in other words, as long as man’s law is not in violation of the greatest command (Love your God with your whole heart, soul and mind) or the second greatest command (love your neighbor as yourself), you have to obey the law. Like restrain your infant in a moving car. And pay your taxes.

Catherine Donkers was talking on a cell phone and writing notes while breastfeeding an unrestrained baby while speeding(!) along the Ohio turnpike without a valid drivers license, while ignoring police signs to stop! (If only she’d been drunk and smoking pot, it would have been the perfect traffic violation)

An Ohio judge sentenced her to three months house arrest, probation for two years, a $500 fine and ordered her to undergo a mental health evaluation on account of her repeated defiance of law enforcement officials.
Catherine Donkers described Judge Donald Martell’s sentence as “absurd”, and said: “The evils of tyranny are only seen by those who resist it”. See this story.

“Donkers claims she did nothing wrong because Michigan has an exemption to its child restraint law for nursing mothers” (she was in Ohio, not Michigan!) See: AbcNews

What’s the most scary part of all this? That she actually DID all this? No! That she still thinks she didn’t do anything wrong! Because that means she’s probably going to do it again. Especially when her moron husband tells her so! Count on it!
